Artichokes with Warm Seafood Sauce

Ingredients:

  • 4 ounces Neufchatel cheese
  • 1/4 cup plain low-fat yogurt
  • 1/2 cup cooked salad shrimp
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped green onion
  • 2 teaspoons lemon juice
  • 4 medium California artichokes, cooked

Preparation:

Microcook cheese at MEDIUM (50%) 45 seconds or until softened. Blend in yogurt until smooth; add shrimp, Parmesan cheese, green onion and lemon juice. Microcook at MEDIUM 2 to 3 minutes or until thoroughly heated. Serve with cooked artichokes.

Makes 4 servings.
